Quinoa, Grilled Corn & Black Bean Tacos

  • 2 packs Success Tri-Color Boil-in-Bag Quinoa
  • 1 tablespoon taco seasoning
  • Juice of 1 lime
  • 3 ears fresh corn
  • 2 tomatoes diced
  • 1 (14 oz can) black beans rinsed & drained
  • Salt & pepper to taste
  • 8 small flour tortillas
  • Fresh cilantro for garnish


  1. Preheat grill to medium heat and grill the whole ears of corn until charred on all sides. Slice the kernels off the corn and place in a bowl. Set aside.
  2. Next, prepare 2 packs of Success Tri-Color Boil-in-Bag Quinoa according to the package directions. Transfer quinoa to a medium bowl and stir in 1 tablespoon of taco seasoning and fresh lime juice. Season with salt & pepper to taste.
  3. To assemble the tacos, spread quinoa down the center of the tortillas, then top with a generous serving of tomatoes, grilled corn, and black beans. Sprinkle with fresh cilantro and serve!
