Spooky Energy Eyeballs

  • 1 cup old fashioned oats
  • ¼ cup honey
  • ¼ cup peanut butter
  • ¼ cup mini chocolate chips
  • ¼ cup dried cranberries
  • 2 tbsp flax seeds
  • 1 tsp vanilla
  • 1 cup white chocolate morsels
  • 1 tbsp coconut oil
  • 2 tsp lemon extract
  • 5-10 drops of red food coloring
  • 5-10 drops of green food coloring
  • 2 tbsp milk chocolate chips for pupils
  • 3 wooden skewers


  1. Place oats, honey, peanut butter, mini chocolate chips, dried cranberries, flax seeds, and vanilla in a medium bowl and stir to combine well. The mixture should be a bit sticky.
  2. Refrigerate for at least 30 minutes.
  3. Using a small scoop or tablespoon, scoop mixture into your hand and roll into a ball. Repeat with remaining mixture.
  4. It helps to slightly wet hands when rolling the balls to prevent mixture from sticking to hands.
  5. Refrigerate the balls for about an hour.
  6. When balls are firm, melt white chocolate in a small microwave safe bowl for about 1 minute or until melted. Stir in coconut oil.
  7. Dip each ball in the white chocolate mixture and set on parchment paper to set. Place in refrigerator to make sure the white chocolate has completely set.
  8. Take 2 small bowls, and add red food coloring to one and greed food coloring to the other. Add a teaspoon of lemon extract to each bowl and feel free to add a few more drops of food coloring to reach desired concentration.
  9. Using 2 wooden skewers, draw green circles on the top of each ball and red “veins” extending from the green eyes.
  10. Melt milk chocolate chips in a small, microwave safe bowl for about 1 minute.
  11. Using a wooden skewer, place a dot in the center of each green circle to make pupils.
  12. Keep eyeballs stored in the refrigerator until ready to serve.
