Spicy Tahini Salmon Garden Rice Bowl

Ingredients

  • 4 4-oz. salmon fillets
  • 2 tablespoons tablespoons oil
  • ½ cup tahini well stirred
  • ¼ cup freshly squeezed lemon juice
  • 1 tablespoon sriracha
  • Salt to taste

For the Bowls:

  • 2 bags Success Garden & Grains Blends -White Rice, Peas, Carrot & Red Bell Peppers
  • 1 large cucumber sliced
  • 1 cup edamame shelled
  • ½ red onion thinly sliced
  • 1 cup grape tomatoes cut in half
  • Cilantro leaves torn

Instructions

  1. Prepare Success Garden & Grains Blends according to package directions. Set aside
  2. Make the Spicy Tahini Sauce by whisking together the tahini, lemon juice, and sriracha. Season with salt to taste and reserve half of the sauce for later. Spoon 1 tbsp of the Spicy Tahini Sauce over each piece of salmon and let the salmon sit for about 5 min.
  3. Add oil to a large pan and heat to medium heat. Cook salmon for about 3-5 minutes on each side, or until desired doneness is reached. Drizzle the remaining Spicy Tahini Sauce over the salmon.
  4. To assemble bowls: Divide the rice among 4 bowls. Top with salmon, cucumbers, edamame, red onion, tomatoes, and cilantro. Enjoy!
