Berry Chia Seed Jam Oat Bars

  • 1 and ½ cups rolled oats
  • 1 cup whole wheat flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup brown sugar
  • 1 egg
  • ½ cup butter melted
  • ¼ cup maple syrup
  • 2 and ½ Tbsp milk

For Chia Seed Jam

  • 1 and ½ cups frozen Oregon raspberries and blackberries thawed
  • 2 tbsp pure maple syrup to taste
  • 2 tbsp chia seeds


Chia Seed Berry Jam:

  1. Puree For 1 and ½ cups of frozen (thawed) Oregon raspberries and blackberries in a blender or food processor. Stir in 2 tablespoons of maple syrup and 2 tablespoons of chia seeds. Place in the refrigerator.

For the Oat Bars:

  1. Preheat oven to 350 degrees F.
  2. Combine the oats, whole wheat flour, baking soda, salt, sugar, egg, butter, maple syrup, and milk in a large bowl. Stir and reserve about a cup of the dough for the crumble.
  3. Press the rest of the dough into the bottom of an 8x8 inch baking dish, that is lined with parchment paper.
  4. Spread the chia berry jam on top of the oatmeal layer and drop the reserved ½ cup oat mixture in small bits on top.
  5. Place the bars in the oven and bake for approximately 30 minutes. When done, let the bars to cool for at least 30 minutes before gently removing them from the pan. Slice, serve, and enjoy!
