Pumpkin Spice Apple Cider Donuts

Servings 12

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 tablespoon pumpkin pie spice
  • ¼ teaspoon salt
  • ½ cup apple cider
  • 2 tablespoons melted butter
  • 1 large egg
  • ¾ cup dark brown sugar packed
  • ½ cup milk
  • 1 teaspoon vanilla extract

To Make the Topping:

  • ¼ cup melted butter
  • ½ cup sugar
  • 2 tablespoons ground cinnamon

  1. Preheat oven to 350 degrees F and spray donut pan with non-stick spray. Set aside.
  2. In a large bowl, combine the flour, baking soda, baking powder, 2 teaspoons of cinnamon, pumpkin pie spice, and salt. Set aside.
  3. Next, whisk together the apple cider, 2 tablespoons of melted butter, egg, brown sugar, milk, and vanilla extract. Carefully pour into the dry ingredients and stir until smooth.
  4. Spoon the batter into the donut cavities and bake for about 10-11 minutes or until the tops are lightly browned and the donut bounces back, when touched. Transfer to a wire rack and let the donuts cool for about 5 minutes.

To Coat the Donuts:

  1. Combine 2 tablespoons of cinnamon and ½ cup of sugar in a medium bowl, and set aside. Brush a small amount of the melted butter on the front and back of the donut and dip the donut into the sugar and cinnamon mixture until completely coated. Repeat with the remaining donuts.

  2. Enjoy!
