Sheet-Pan Eggs with Bacon, Asparagus & Sweet Potatoes

  • 5 large EGGS
  • 1 lb. asparagus ends trimmed
  • 2 sweet potatoes peeled & chopped
  • 5-6 slices bacon cut in half to make 10-12 smaller slices
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


  1. Preheat oven to 375°F. Grease a baking sheet with nonstick spray.
  2. Spread the sweet potatoes and bacon onto the baking sheet, and season with garlic powder, olive oil, and salt & pepper. Bake for about 10-12 minutes.
  3. Remove from the oven and add the asparagus. Toss to combine with the other ingredients, and make 5 small wells for the eggs. Crack one egg into each well and gently place the sheet-pan back into the oven.
  4. Bake for another 12-13 minutes, or until the eggs are cooked as desired and the asparagus is tender. Serve immediately & Enjoy!
