Author Beautiful Eats & Things

  • 1 and 1/2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon espresso powder (or 1/2 teaspoon instant coffee powder) optional
  • 1/2 cup unsweetened applesauce
  • 1/3 cup oil
  • 1/2 cup sugar
  • 1/3 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup low fat plain Greek yogurt
  • 3/4 cup milk chocolate chips
  • 1/3 cup pistachios crushed

  1. Preheat the oven to 350 degrees F. Grease a 9X5-inch baking pan and set aside.
  2. In a medium bowl, combine the flour, cocoa, salt, baking powder, espresso powder and baking soda.
  3. In a large bowl, whisk together the applesauce, oil, sugar, brown sugar, eggs, vanilla and Greek yogurt. Stir in the dry ingredients and pour half of the chocolate chips into the batter. Stir until the batter is just combined; be careful not to overmix.
  4. Spread the batter evenly in the prepared pan and sprinkle the remaining chocolate chips and crushed pistachios on top. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let the bread cool in the pan for about 5-10 minutes before removing it from the pan. Transfer to a cooling rack to cool completely.
  6. Enjoy!
