No-Bake Coconut Pecan Date Bars

  • ½ cup California Dates
  • ½ cup pecans
  • 3 tablespoons almond butter
  • ¼ cup sweetened coconut
  • 1 cup oats
  • 3-4 tablespoons water
  • Optional: ¼ cup milk chocolate morsels for drizzle


  1. Line an 8-inch square baking pan with parchment paper and set aside.
  2. Add dates, pecans, and almond butter to a food processor. Blend until you get a somewhat cohesive, sticky mixture. Add water, 1 tablespoon at a time, if the mixture is too thick or hard to combine.
  3. Transfer the mixture to a bowl and fold in the oats and half of the coconut. Press the mixture into the pan and sprinkle the remaining coconut on top. Place in the refrigerator for about 30 minutes or until the bars are firm.
  4. Remove from the refrigerator and Cut into about 9 bars. Drizzle with a little melted chocolate, if desired.
  5. Enjoy!
