Ginger Maple Mustard & Herb Roasted Carrots

  • ¼ cup maple syrup
  • 1 and ½ tbsp Coleman’s Mustard
  • 1 tbsp oil
  • 2 tsp ground ginger
  • 2 tsp thyme
  • 2 lbs whole carrots peeled & sliced in half
  • Salt and pepper to taste


  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine maple syrup, oil, ground ginger, and thyme. Toss in carrots until fully coated with mustard mixture. Season with salt and pepper to taste.
  3. Spread carrots on a baking sheet and cook for approximately 25-30 minutes, or until carrots are soft but not mushy.
  4. Serve warm and enjoy!
