Sweet Potato Pie Stuffed Biscuits

  • ¾ cups mashed sweet potato
  • 1 tbsp reduced fat margarine melted
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • 2 tsp all spice
  • 3 tbsp honey
  • 1 tbsp milk any kind will do!
  • 1 can butter flavored biscuits 16.3 oz


  • 1 cup powdered sugar
  • 1 tbsp reduced fat margarine melted
  • 1 tsp vanilla
  • 1 tbsp milk any kind will do!
  • ¼ cup chopped pecans


  1. Preheat oven to 350 degrees.
  2. Spray cast iron skillet with a non-stick cooking spray.
  3. Cut biscuits in half and arrange in skillet. Spread biscuits to cover bottom of skillet. Set aside.
  4. In a medium bowl, combine mashed sweet potato, 1 tbsp of melted margarine, vanilla, cinnamon, all spice, honey, and milk. Beat with mixer until smooth or add to blender until smooth and creamy.

  5. Spread sweet potato mixture over layer of biscuits and place the tops of the biscuits on top.
  6. Place in oven and bake for about 23-25 minutes. Biscuits will be golden brown on top when done.
  7. In a small bowl combine powdered sugar, 1 tbsp of melted margarine, vanilla, and milk. Stir until consistency resembles a glaze.
  8. Spread glaze over biscuits and sprinkle with pecans.
  9. Enjoy!
