Easy Blueberry Banana Baked Oatmeal

  • 2 cups milk dairy or nondairy
  • 2 large eggs
  • 1 medium banana mashed
  • 1/2 cup pure maple syrup
  • 1/4 cup Truly Grass Fed unsalted butter melted and slightly cooled
  • 3 and ¼ cups old-fashioned oats
  • 1 and ½ tsp baking powder
  • 1 tbsp ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 and 1/2 cups blueberries fresh or frozen
  • optional for topping: ¼ cup pumpkin seeds or nuts


  1. Preheat the oven to 350°Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray and set aside.
  2. Combine all of the ingredients together in 1 large bowl. Pour into prepared baking pan. Top with seeds or nuts, if desired. Bake for about 25 minutes or until the center is almost set, which gives you a softer texture. For drier and more solid baked oatmeal, bake until center has set.
  3. Cool for 5 minutes before serving. Slice, serve, and enjoy!
