Simple Vegan Blackberry Broccoli Salad

Ingredients

  • 1 and ½ cup fresh or frozen blackberries
  • ¼ cup apple cider vinegar
  • 6 cups broccoli florets
  • 2 cups carrots shredded
  • ½ cup golden raisins
  • 1 small purple onion chopped
  • ¼ cup pecans
  • ¼ cup sliced almonds
  • Salt/pepper to taste
  • Optional: additional blackberries pecans, & almonds for garnish

Instructions

  1. Place blackberries and apple cider vinegar in a blender and pulse until smooth. Set aside.
  2. Add broccoli, carrots, raisins, onions, pecans, and almonds to a large bowl. Pour blackberry mixture on top and toss until all ingredients are combined. Season with salt/pepper to taste.
  3. If desired, place additional blackberries, pecans, & almonds on top before serving. Enjoy!

Recipe Notes

*For best results, place salad in the refrigerator for about 30 minutes before serving.
