Lightened-Up Spicy Mexican Street Corn

  • 4 ears sweet corn husks peeled away from corn and tied at the top
  • 1/4 cup reduced-fat mayonnaise
  • 2 tablespoons reduced-fat sour cream
  • 1 teaspoon fresh jalapeno minced
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh parsley chopped
  • salt/pepper to taste


  1. Pre-heat oven to 350 degrees.
  2. In a small bowl, combine mayonnaise, sour cream, jalapeno, chili powder, garlic powder, and salt/pepper to taste. Spread evenly over corn and place on a baking sheet.

  3. Bake for approximately 15 minutes or until corn is tender.
  4. Sprinkle with parsley and serve.
  5. Enjoy!
