Oven Roasted Sweet Potatoes & Apples

  • 3 sweet potatoes peeled & cut into cubes
  • 1 red apple cored & sliced
  • 1 green apple cored & sliced
  • 2 tbsp Mazola┬« Corn Oil
  • 2 tbsp honey
  • 2 tsp cinnamon
  • 3 sprigs of fresh thyme
  • juice of 1 lemon
  • 1/2 tsp course sea salt


  1. Preheat oven to 375 degrees.

  2. Spread sweet potatoes and apples on a baking sheet. Drizzle with Mazola┬« Corn Oil and honey. 

  3. Sprinkle with cinnamon, thyme, and lemon juice. Toss with hands or a large spoon to make sure that all ingredients are distributed evenly.

  4. Sprinkle with sea salt. You can choose to add slices of lemon if desired.  Place in the oven and bake for about 30 minutes or until sweet potatoes are tender.

  5. Switch to broil and broil on high for about 5-7 minutes.

  6. Enjoy!
