I don’t care what anyone says…oatmeal is one of the best foods in the world! Ever since I was a little girl, I loved waking up to a bowl of warm and cozy, apple cinnamon oatmeal! My mom would add in a little extra butter and cinnamon, which made it taste absolutely divine!
Even though my bowl of oatmeal doesn’t taste exactly like my mom’s, I think that this Easy Blueberry Banana Baked Oatmeal comes pretty close! If you haven’t tried baked oatmeal yet, you’re missing out on a real treat! It provides the same flavor, but baked to a soft, moist perfection of goodness!
In honor of National Breakfast Month, I decided to make this Easy Blueberry Banana Baked Oatmeal, including those familiar flavors that loved growing up, which includes Truly Grass Fed Natural Creamy Unsalted Butter! Truly Grass Fed is one of my favorite brands, so I was super excited to find out about the new launch of their butter!
I love this brand because all of their dairy is 95% grass fed and sourced from small family farms in Ireland that have an average of 100 cows roaming happily on 200 lush green acres. They spend at least 250 days out in the pastures too.
Like most of my recipes, this Easy Blueberry Banana Baked Oatmeal was a breeze to make! I simply added oats, melted butter, milk, eggs, fruit, sugar and spices to a bowl and combined everything before placing it into a baking dish. I like my baked oatmeal soft and moist, so I only bake it for about 25 minutes. For a denser texture, you can definitely bake it longer.
This Easy Blueberry Banana Baked Oatmeal turned out fantastic! It literally tasted like a warm bowl of oatmeal, but in a convenient square-shaped treat! The quality and texture remain the same once it’s reheated, making it perfect for meal prep!

Easy Blueberry Banana Baked Oatmeal
- 2 cups milk dairy or nondairy
- 2 large eggs
- 1 medium banana mashed
- 1/2 cup pure maple syrup
- 1/4 cup Truly Grass Fed unsalted butter melted and slightly cooled
- 3 and ¼ cups old-fashioned oats
- 1 and ½ tsp baking powder
- 1 tbsp ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 and 1/2 cups blueberries fresh or frozen
- optional for topping: ¼ cup pumpkin seeds or nuts
Preheat the oven to 350°Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray and set aside.
Combine all of the ingredients together in 1 large bowl. Pour into prepared baking pan. Top with seeds or nuts, if desired. Bake for about 25 minutes or until the center is almost set, which gives you a softer texture. For drier and more solid baked oatmeal, bake until center has set.
Cool for 5 minutes before serving. Slice, serve, and enjoy!
